Pago de las Sabinas 2016 Red Wine

Vine location: Quintanilla de Arriba
Altitude: 910 m.a.s.l. which allows the grape to mature entirely and improves its acidity for perfect growth in the bottle.
Harvest: Manual harvest with 10 k.g. boxes.

Elaboration: Pre-fermentation maceration in a refrigerated chamber at 5ºC for 24 hours. Grapes pass twice through the selection table, 100% destemmed and 40% lightly crushed.
Made in oak barrels and only with very short manual “bazuqueo” or “pigeage” to maintain the integrity of the berry. Alcoholic fermentation is carried out by its own yeasts. Maceration time of approximately 19 days. Malolactic fermentation in 500-liter barrels.
Aging: 12 months in French oak barrels.
Alcohol level: 14% vol.
Serving temperature: 15ºC

TASTING NOTES:

Appearance: Bright cherry color.
Nose: Red fruit stands out, currants, strawberries with a jellybean background, licorice, the wood that is almost a mere companion leaves a finish of cinnamon, and white pepper.
Mouth: Fresh, with the identity of the terroir, and the altitude of the vineyard that it comes from, agile, with fine touches of spices, elegant, deep.
Pairing: Pairing: Good companion for red meat, lamb, game and roasts.
