Estrella del Sur Cabernet Sauvignon 2017

Region: Gualtallary, Tupungato, Valle de Uco, Mendoza (1350 m.).
An Opulent Cabernet Sauvignon with a bouquet of liquorice, vanilla and asiatic spices. On the palate, this full body wine has an array of red fruits particularly red cherry and pomegranate as well as notes of cinnamon. Nicely integrated & supple tannins enhance a long velvety finish.

The grapes were harvested in selected blocks between the 4th and 10th of April for even ripeness. The harvest was conducted manually in small bins.
The alcoholic fermentation and extended maceration on skins was carried for 25-30 days in open top barrels with manual punchdown for better extraction and a lush and broad mouthfeel as well as small concrete tanks. The wine was then aged in new French oak barrels (Mercurey, Tarransaud Tonnellerie) for 14-15 months with gentle racking.
